I'm just curious, is there a way to find out how many [different] people have logged into the site in the last month, and how many of those people have posted something?

SMF does have a substantial breakdown the forum statistics, which you can see here (http://www.40konline.com/index.php?action=stats), but it doesn't quite work in the way you're requesting.  You can also view the recent posts (http://www.40konline.com/index.php?action=recent), but this does not cover the length of time you're asking for.
