if an attack bike takes 1 wound can he still shoot the heavy bolter or multi melta??

The attack bike functions the exact same as if it were a single model. If it takes a single wound, it still functions at the same level as if it were not wounded at all much in the same way as any other multi wound model.

Yes, because it's a single multi-wound model with one profile. That the model has two Space Marines on it makes no difference.

The same can be said for all similar multi-wound 'Team' models, the only other of which i can think of right now being Guard Heavy Weapons. They are not counted as vehicles in any way, shape or form, and as such have no type of 'weapon destroyed' mechanic to them taking damage.

i suppose however im wondering is it easier to kill armour 10 or 2 wounds toughness 5 ?

It depends on too many other factors. I assume you're asking whether or not you should swap your Attack Bikes out for Land Speeders, though, so my answer will be "it depends on what's firing at you"

I think we all start out that way (me too, just a year and a bit ago), but the random factors in the game, especially dice rolls, make such a list a "holy grail".  Not that some lists aren't more winnable than others. I now strive for lists where the units make sense together (that takes experience playing), but mainly that are fun to play.  For example, when I "load up" on lots of tactical squads, I generally win a lot more games. However, I find it a lot more fun (and challenging) to play only a couple of squads, and play more specialist units/vehicles.

Just to give you a better idea of what's more likely to survive what, armor 10 is immune to s3 weapons and below, and is still pretty tough to kill with s4 as the best that can do is glance. So it's more or less safe against small arms fire. An attack bike however will be somewhat vulnerable to small arms fire as it's likely to occur in large amounts that force you to take a lot of armor saves. So in that case, the attack bike will take more damage.

At the other end of the spectrum are things like lascannons and plasma weapons. Those will penetrate armor 10 without fail, and if you're unfortunate enough to get hit by a melta of any sort, that pen will be at +1 on the damage chart, so it's more likely to take the tank out of commission. Attack bikes on the other hand have other models in the squad that's being shot at, so while you will lose a model with almost 100% certainty, it will not be as big a loss to your squads effectiveness as a wrecked land speeder.

So that's the long and short of it. There are no guarantees when choosing an army list, but you can pick things that compliment each other by covering their weaknesses.
